This is as easy as it gets.  Cube up some fruit and pound cake and skewer.  Place on grill for two minutes, flip, two more minutes and done.

Top with chocolate drizzle or whip cream.

This sweet and spicy rub mix is great on pineapple, mango, peaches, bananas, and shrimp.

Prep Time: 5 minutes

Yield: 1/4 cup

Great sweet and spicy rub that is perfect on pineapple, mango, peaches, bananas, and bacon too!

Ingredients

  • 1/4 cup Turbinado Sugar
  • 1/2 tsp ground pepper
  • 1 tsp salt
  • 1 tsp Ground Cinnamon
  • 1 tsp Ancho Chili Powder
  • 1/8 tsp Ground Cloves
  • 1/8 tsp Grated Nutmeg

Instructions

  1. Combine all the ingredients. Store in an airtight container.

Select peaches a bit firmer than you would eat out of hand, as they will soften when grilled.

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: Serves 4

 Ingredients
GrilledPeachesFor the Glaze
    • 6 Tbs Butter, melted (3/4 stick)
    • 1/4 cup honey
    • 1 Tbs vanilla extract
    • 2-3 oz bourbon (to taste)
    • 1 tsp ground cinnamon
For the Dessert
  • 4 large peaches, halved and pitted
  • 4 scoops vanilla ice cream

Instructions

  1. In a medium sauce pan, combine butter, honey, vanilla, bourbon and cinnamon over a medium heat until bubbly.
  2. Preheat grill to high. Grill peaches, flesh size down until tender. Brush peach halves with glaze.
  3. Place peach halves in a bowl and top with a scoop of ice cream.

PEACH COBBLER

Serves 10
Ingredients
• 1 box yellow cake mix
• 12 oz. milk or any juice you prefer
• 2 bags frozen peaches or
any fruit you desire.
• 3/4 cup cinnamon and
sugar mixture, note mostly sugar, maybe 1 teaspoon of cinnamon
• 3 oz. honey
Cooking Directions
1. Preheat your grill or smoker to 280° F or preheat oven to 350° F.
2. In a large mixing bowl, combine the yellow cake mix and 7-up, mix well (do
not over mix). Batter will be lumpy not completely smooth.
3. Pour frozen fruit in the bottom of dutch oven or 9 x 11 foil pan.
4. Cover with cake mixture.
5. Drizzle with honey, and then sprinkle with cinnamon and sugar mixture.
6. Smoke 3 – 4 hours until a toothpick can be inserted and comes out clean or
if using an oven, bake for 1 hour or until done.

Gut the pumpkin

Cut up pumpkin into 4 inch squares

Grill with skin side down

Put a pat of butter on each square,  add a sprinkle of Nutmeg, Cinnamon , All Spice, Brown Sugar, Salt.

Grilled Watermelon

8 slices seedless watermelon wedges, 1 1/2 inches thick
2 tablespoons Olive oil
Sea salt
Fresh ground pepper

Cut the watermelon in half, place cut side down on the table, then cut into slices, about 1 1/2 inches thick. Cut each slice in half, creating two wedges (if your melon is really big, you may need to cut each slice into three wedges). You can leave the rind on or cut it off, totally up to you.

Lightly sprinkle the wedges on both sides with sea salt. Stand the wedges on their edges on a rack over a sink or pan and let them drain for half an hour

Preheat the grill to 350.

After the watermelon has drained, rinse each piece under cold running water. Place each piece between two folded paper towels and gently but firmly press to remove excess water. You should stop just when you feel the watermelon begin to crunch.

Brush the watermelon lightly on both sides with the olive oil. Grill over heat until grill marks have formed and the melon is slightly softened, about 5 minutes.

Remove from grill and sprinkle with sea salt and a little fresh ground pepper.

Pineapple Boat

Pineapple Boat

 It’s summer time!  While we are crazy about BBQ, it’s also nice to enjoy something light, and fruity in the hot weather.  This pineapple recipe is the yummiest! 

  • 1 stick of butter
  • 1 cup brown sugar
  • 1 teaspoon of cinnamon
  • ¼ teaspoon nutmeg
  • 2 shots of vanilla rum
  • 2 whole Pineapples
  • 1 fresh container of chunked pineapple

Cut the pineapple in half top to bottom.  Remove the center of each half by coring and chunking the pineapple.  You should end up with two boats afterwards.

Melt all ingredients in a sauce pan holding back the rum.  When a slurry is formed, remove from heat and stir in rum.

Place all chunks of fresh pineapple in boats and fill each with sauce.

Heat in indirect fashion on grill or smoker.

Serve with toothpicks.

Enjoy.
