Baja Ceviche

  • Gulf Shrimp
  • Red Onion
  • Cilantro
  • Jalapenos
  • Lime Juice
  • Roma Tomato
  • Lime EVOO
  • Carrots
  • Mayo
  • Avocado
  • Salt
  • Pepper
  • Corn Tortillas
  • eggs
  1. Dice shrimp and mahi,soak in lime juice for five minutes.  Drain and discard juice
  2. Add in Salt, onion, tomato, jalapenos, oil
  3. In blender, combine egg yokes, lime, jalapeno, cilantro.  Blend in oil for Aioli
  4. Lightly fry tortillas and place ceviche on each, top with Aioli.
