• Campari Tomato’s (golf ball size tomato)
  • Crumbled Gorgonzola Blue Cheese
  • Balsamic Reduction – make sure it is the reduction and not standard balsamic vinegar


Recipe and Technique:

  1. Prepare your smoker at 275 degrees,  or set one burner of your grill on Medium Heat so that you can cook on indirect heat.
  2. Cut off the top 1/3 of the tomato
  3. Sprinkle crumbled blue cheese on top of the tomato
  4. Place the tomato cut side up on the smoker or Cool part of the grill to cook with indirect heat
  5. Remove tomato from Smoker/Grill when Blue Cheese is melted
  6. Drizzle with Balsamic Reduction
