Did you know there’s an app for that?  LOL.  We love our iPhones, and found an app for great recipes and food at www.icookingapps.com!  We have not tried this recipe yet, but plan on serving this yummy appetizer at the next gathering at the Joppie home!  Wait!  I think we need to have BBQ Bob and family over for this one.
Japanese Chicken Balls (Tsukune)
Ingredients:
Serves 5
14 oz – 400 g ground chicken
1 green onion
1 small egg
4 Tbsp breadcrumbs
4 Tbsp soy sauce
4 Tbsp sake
4 Tbsp mirin (rice wine)
1 Tbsp sugar
2 Tbsp vegetable oil
1 tsp cornstarch

Preparation:
1. In a large mixing bowl, put ground chicken, chopped green onion, egg, breadcrumbs, 1 Tbsp soy sauce, 1 Tbsp sake, 1 Tbsp mirin and 1 tsp sugar. Mix well together.
2. Roll the mixture into balls of about 2 cm – ¾ inch diameter. Heat the oil in a pan. Quickly brown the balls. (The balls do not need to be cooked all the way through.) Remove them from the pan and set aside.
3. Pour the remaining soy sauce, sake, mirin and sugar into the same hot pan. Bring to a boil. Add cornstarch (thinned with a bit of water) and mix well over low heat. When the sauce thickens, remove from heat and set aside.
4. Preheat the grill.
5. Thread the balls onto skewers. Place them on the oiled grill rack. Cook completely over direct heat.
6. Brush the prepared sauce over the balls. Quickly grill over high heat. Serve warm.
