lomi lomi salmon

What you need:
24 oz of Salmon,
Sea Salt
7  medium size tomatoes or 3 large ones
1 1/2 cup green onions chopped
1 Serrano pepper diced finely
1 large Lemon
1 large sweet yellow onion diced

Makes about 10 servings

1. Wash off well and remove the skin. Look for the grey meat around the side nerve line and cut all of that out.

2.  Rub salt all over the fish and wrap in plastic wrap. Refrigerate for 10 hours or overnight.

3. Remove from refrigerator and place in a bowl with ice cold water. Replacing water every 30 minutes for a total of 1 hour.

4. Cut into small cube pieces.

5. Cut tomatoes in halves, remove seeds, and dice. Dice onion and sarano as well. Chop green onions.

6. In a new clean bowl, add salmon, tomatoes, onion, and green onions. Mix it well. Squeeze in half a lemon and reserve other half for serving.

7. Place in fridge, let it chill and serve when ready .
