Cutting the spine out of a chicken to flatten it out is a great way to grill a chicken.
- Rub them or marinate them after you flatten it out, what ever strikes your fancy.
- Cover some bricks with foil and put them on the grill as you bring it up to temp.
- When you have the grill up to temp move the bricks off to the side and place the chicken skin side down.
- Use tongs to handle the bricks and place them on the bone side. The hot bricks will cook the chicken in conjunction with heat from the grill.
- Close the lid and bring the internal temp of the chicken up to 165F.
Great chefs will sauce after the grilling. Sometimes you won’t even need sauce.
