Marinade
1 C vinegar
1C soy sauce (Datu Puti brand preferred for this dish)
3 bay leaves
1/2 of an onion, cut into quarters
4 cloves of garlic, crushed
1/4 C brown sugar
2 tsp black peppercorns
optional: 1 jalapeño, split in half
Directions
Marinate your drums and thighs in it overnight then grill until the internal temperature reaches at least 175°F and up to 200°F. Use your Thermapen to check the temp!
