Ingredients:
- Campari Tomato’s (golf ball size tomato)
- Crumbled Gorgonzola Blue Cheese
- Balsamic Reduction – make sure it is the reduction and not standard balsamic vinegar
Recipe and Technique:
- Prepare your smoker at 275 degrees, or set one burner of your grill on Medium Heat so that you can cook on indirect heat.
- Cut off the top 1/3 of the tomato
- Sprinkle crumbled blue cheese on top of the tomato
- Place the tomato cut side up on the smoker or Cool part of the grill to cook with indirect heat
- Remove tomato from Smoker/Grill when Blue Cheese is melted
- Drizzle with Balsamic Reduction
