• 2 cups sliced peaches (fresh or thawed if frozen)
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1/2 cup unsalted butter
  • 3/4 cup all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk

Recipe and Technique:

  1. Pre-heat Grill to Medium/High heat(ideally  to 375*F)
  2. Places sliced peaches in a large bowl. Sprinkle with 1/2 cup of sugar and flour. Stir to coat peaches and set aside.
  3. In a separate bowl, combine flour, 3/4 cup sugar, baking powder, salt, and milk, set aside.
  4. Over low heat, melt butter in a cast iron skillet.
  5. Pour the batter over the melted butter – Do not stir into the butter.
  6. Pour the peaches over the batter – again, do not stir.
  7. Bake for 35 to 40 minutes, in a covered grill,  until crust is light brown and puffy.
  8. Remove from the grill and allow to cool slightly before serving.
  9. Serve warm with vanilla ice cream
