Pineapple Boat

 It’s summer time!  While we are crazy about BBQ, it’s also nice to enjoy something light, and fruity in the hot weather.  This pineapple recipe is the yummiest! 

  • 1 stick of butter
  • 1 cup brown sugar
  • 1 teaspoon of cinnamon
  • ¼ teaspoon nutmeg
  • 2 shots of vanilla rum
  • 2 whole Pineapples
  • 1 fresh container of chunked pineapple

Cut the pineapple in half top to bottom.  Remove the center of each half by coring and chunking the pineapple.  You should end up with two boats afterwards.

Melt all ingredients in a sauce pan holding back the rum.  When a slurry is formed, remove from heat and stir in rum.

Place all chunks of fresh pineapple in boats and fill each with sauce.

Heat in indirect fashion on grill or smoker.

Serve with toothpicks.
